lime curd

1 1/2 cups

1 cup sugar
1/2 cup butter
1/4 fresh lime juice
3 egg yolks, lightly beaten

in top of double boiler, combine sugar, butter, and lime juice

place over simmering water; cook just until butter is melted

stirring constantly, add egg yolks; cook 12-15 minutes, stirring occasionally, until thick

Remove from heat; cool

cover and refrigerate 4-6 hours
