Lemon-curd Whipped topping

3 cups frozen nondairy whipped topping, thawed

1 cup prepared lemon curd

½ tsp purse vanilla extract

¼ tsp coarse salt

1.       In medium bowl, gently fold together all ingredients. Transfer to airtight container and refrigerate for 2 hours before serving

*This is nice served between stacked sponge or pound cake circles (like napoleons) and garnished with a sprig of thyme
