Ham Salad

3 cups ground fully cooked ham
2 cups (8oz) shredded cheddar cheese
2 celery ribs, diced
8 green onions, chopped
1/3 cup unsalted sunflower kernels
1/3 cup diced green pepper
1/3 cup chopped dill pickle
1/3 cup mayo
1/3 cup sour cream
1 jar (4 oz) diced pimientos, drained
1 tsp ranch dressing mix
1 tsp coarsely ground pepper
1 tsp minced fresh parsley
8 lettuce leaves
8 croissants, split

in large bowl, combine first 13 ingredients.  Serve on lettuce lined croissants
