Ham and Apricot Pinwheels

makes 24

1 (8oz) package cream cheese soft
1/4 cup finely chopped dried apricots
2 T apricot preserves
3 large flour tortillas
12 thin slices deli ham
Garnish: apricot preserves, chopped fresh parsley

in small bowl, combine cream cheese, dried apricots and apricot preserves

Spread one-third cream cheese mixture onto each flour tortilla.

place four slices of ham on top of cream cheese mixture.

Roll up tortillas, wrap tightly in plastic warp.

Chill 1 hour, and cut into spirals.

Garnish with apricot preserves and parsley, if desired.
