Fruit Salad Cups with Spiced Syrup

FRUIT SALAD CUPS with SPICED SYRUP (~ 10 servings)                    

*FYI the spiced syrup needs to chill one hour before using

10 waffle bowls

½ (24 oz) package vanilla flavored candy coating, melted

2 cups fresh pineapple cubes

2 cups cantaloupe balls

2 cups watermelon balls

2 cups honeydew balls

Spiced Syrup (SEE BELOW)

Garnish: fresh mint and ground pistachios

1.       Dip edges of waffle bowls into melted white candy coating. Set bowls right side up on parchment paper to dry

2.       In large mixing bowl, combine pineapple, cantaloupe, watermelon, honeydew; and toss gently.

3.       Pour ½ cup of the Spiced Syrup over fruit, and toss gently to combine

4.       Spoon the fruit mixture into the prepared waffle bowls. Garnish with fresh mint and ground pistachios

SPICED SYRUP

¼ cup honey

¼ cup orange liqueur

¼ cup orange juice

¼ cup vanilla bean, split lengthwise and scraped, seeds reserved

½ tsp ground cardamom

In small bowl, whisk together the honey, orange liqueur, orange juice, reserved vanilla bean seeds, and ground cardamom. Refrigerate for at least one hour before serving.
