2 1/2 cups all purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
zest of 1 lime
1/2 cup butter, soft
1 cup shredded coconut
1 cup heavy cream
1 large egg
Preheat to 350
Lightly grease baking sheet or use parchment paper
In large bowl, combine flour, sugar, baking powder, salt, and lime zest.
Using pastry blender, cut in butter until mixture is crumbly.
Stir in coconut.
Combine cream and egg and add to dry ingredients, stirring just until dry ingredients are moistened.
On Lightly floured surface roll dough to 1/2 inch thickness
Using 2 inch round cutter, cut scones and place on baking sheet
Bake 23-25 minutes or until lightly browned.
