Cinnamon Apple Pecan Scones

SCONE:
  • 3 c. self-rising flour
  • 1/2 c. sugar
  • 1 c. chopped apples 
  • 1 t. cinnamon 
  • 1 stick unsalted butter
  • 1 c. buttermilk (sometimes you may need to add a bit more)
Topping:
  • 1/4 c. butter, softened
  • 1/2 c. brown sugar
  • 2 T. flour
  • 1/4 c. oatmeal
  • 1 t. cinnamon
  • pecans (optional) 
Combine flour, sugar, apples, and cinnamon.  Cut in butter until mixture is course and crumbly.  Add just enough buttermilk to make a soft dough.  Scoop out about 1/3 of the dough and form a small disc about 6-8 inches in diameter and about 1/2 inch thick (the width of your pinky finger).  Cut into 8 pie-shaped pieces. Do this for the remaining dough. Place on a cookie sheet lined with parchment paper. 

Mix together topping ingredients, place 1-2 T. of topping on each scone.  Press down lightly and bake at 400 degrees until done, about 8-12 minutes or longer depending on your oven. My oven takes about 20 minutes.

Makes about 24 scones.  Enjoy!
