Use with Earl Grey Syrup
1 ½ cups baking and pancake mix
1 C sugar
1/3 C unsweetened cocoa
¾ cup strongly brewed chocolate tea * (SerendipiTea ~ Once Upon a Tea, Chocolate Tea works well)
2 T canola oil
2 eggs, lightly beaten
1 tsp vanilla extract
1 tsp chocolate extract
In medium bowl, combine the pancake mix, sugar and cocoa. Stir in the tea, oil, eggs and vanilla extract, and chocolate extract, whisking to combine.
Preheat waffle maker. Spray with nonstick cooking spray.
Ladle ½ cup of waffle batter into wells. Cook for five minutes or until done.
Carefully remove waffles. Repeat with remaining batter, spraying nonstick spray in between waffles.
Cut waffles into quarters.
Serve warm with Earl Grey Syrup. Garnish with fresh berries and confectioner’s sugar if desired.
