Cheese and Date Tarts

8 tarts

1 cup flour
1 cup firmly packed grated sharp cheddar cheese
1/2 cup butter, soft
1 (8oz) chopped dates
1/2 cup lightly brown sugar
1/4 cup fresh orange juice
1 tsp orange zest

combine flour, cheese, butter.

using mixer at medium speed, beat until well blended and creamy in texture

cover and refrigerate overnight

preheat to 350

in saucepan over low heat, combine dates brown sugar, orange juice, and orange zest

cook until dates are soft and mixture becomes thick as paste, stir occasionally

on lightly floured surface, roll dough to 1/8 inch thickness

using 3 inch round cutter, cut circles

place 3/4 tsp date filling on center of each round

fold over and press edges together with fork to seal

bake 15 minutes.
