Calla Lily Sandwich

white bread crusts removed and rolled thin
1 package (8oz) cream cheese (may also use Boursin Cheese or combine 1/2 Boursin with 1/2 Cream Cheese)
2 T fresh chopped chives
1 T fresh dill
1/2 cup toasted walnuts finely chopped
Salt and Pepper to taste
Paprika to garnish
Matchstick Carrots or I used an Orange Bell Pepper Cut into matchsticks
Green Onion ends for the "stalk" of the flower

In a bowl, mix cream cheese, finely-chopped walnuts, salt and pepper and herbs. Beat with mixer on medium speed until good and creamy.

Use a 2 1/2″ cookie/biscuit cutter and cut out 30 rounds from bread. Then with a rolling pin, roll each round so it’s about 1/8 inch thick. For each roll, spread about 1 teaspoon of the cream cheese mixture in the middle and to within 1/4 inch of the sides. Sprinkle a bit of paprika in the center. Roll the bottom of the round over and pinch to seal. It will look like a calla lily.

Wash, peel and cut carrots into very thin matchsticks or use Orange bell pepper. Cut 2-inch pieces and stick a carrot/pepper into the center of each rolled sandwich. This looks like the stamen.

Then stick the blade ends of the green onions in the pinched end.
