Country Vanilla Pie

Pastry for a 1-crust, 9-inch pie. I always make the Pioneer Woman's amazing and flaky Pie Crust.
Bottom part:

1/2 cup white sugar

2 tablespoons flour

1 egg, well beaten

1 cup maple syrup

1 cup water

1 teaspoon vanilla

Top Part:

3/4 cup brown sugar

1/3 butter

3/4 cup flour

1/2 teaspoon soda

1/2 teaspoon baking powder


Whisk all ingredients for bottom part in a heavy saucepan on medium heat, until thick (about 5 minutes). Whisk every minute, or so. Set aside to cool. Combine ingredients for top part with pastry blender or two knives, until you have pea-sized crumbs. Pour cooled bottom part into pie shell and top with crumb mixture. Bake at 350 degrees for 50 minutes, or until nicely browned.

Delicious served cold. Delicious x infinity served warmed with vanilla ice cream.
