Whole wheat apple cinnamon cake

  • 2 cups whole wheat flour
  • 3 cups apples, cut in chunks
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 cup milk
  • 2 t baking powder
  • 1 t cinnamon
  • vanilla 

Mix the flour with baking powder, cinnamon and vanilla.

In a bowl beat the eggs. Add sugar and beat until incorporated.

Add oil and beat again.

Add the flour mixture slowly parallel with milk until combined.

Fold in apples.

Pour the mixture in a spring form covered slightly with oil.

Top with cinnamon sugar.

Bake in a preheated oven at 180C for about 1 hour or until a toothpick inserted comes out clean.

Let cool 10' before cutting it.
