Vanilla cupcakes

Makes 24 cupcakes


  • 1 1/2 cup self rising flour
  • 1 1/4 cup all purpose flour
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 eggs in room temperature
  • 1 cup milk
  • 1 t vanilla extract

In a bowl combine the two kinds of flour and set aside.

In another bowl beat with the mixer in medium speed the butter until smooth. Add gradually the sugar and beat until stiff peaks. Add the eggs one by one beating well.

Add alternately flour, milk and vanilla in 3 parts, beating until combined. Don't overbeat because they will lose their air.

Empty the mixture in a cupcake tin with lined cases, fulling them about 3/4.

Bake at preheated oven for 20-25 minutes or until a toothpic inserted in comes out clean.

Take out from the oven and let them cool for 15 minutes in the tin.
