Christmas cookies with cranberries

  • 2 cups sun oil
  • 1 1/2 cups honey
  • 1 t baking soda
  • 1 cup orange juice
  • 1 t vanilla
  • 700 gr whole wheat flour
  • 1 1/2 cups dried cranberries

Mix together the oil, orange juice, honey and baking soda until combined.

Add slowly the flour and the vanilla until you make a dough. You don't want to be very soft as you can't work it with your hands.

Add the cranberries.

Make little balls, tap them to flatten a little bit and place in a pan with wax parchment paper with distance at least 1 finger away.

Bake in a preheated oven at 180C for about 20'-25'.

Let them cool before removing from pan.

They harden more as they cool so don't overbake.
