Carrot cupcakes with cream cheese frosting

Makes 24 cupcakes

For the cupcakes:

  • 300 gr grated carrot
  • 250 gr brown sugar
  • 3 eggs
  • 300 gr all-purpose flour
  • 200 gr corn oil
  • 2 tsp baking powder
  • zest of 1 orange
  • 100 gr choped walnuts
  • 100 gr raisins
  • 1 tsp cinnamon

For the frosting:

  • 500 gr cream cheese softened
  • 100 gr powdered sugar
  • bit of orange zest for flavor

Beat the eggs with the sugar. Add the oil while beating and slowly add the carrot and the remaining ingredients.

Bake at 180C for 25-30 minutes.

Let them cool in a rack.

In a bowl mix the sugar with the cream cheese and the zest until combined.

Decorate the cupcakes and place in refrigerator.
