Banana nut muffins with cinnamon topping

Ingredients:

  • 3 ripe bananas, mashed
  • 1 3/4 self-rising flour
  • 3/4 cup brown sugar
  • 1 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 T milk
  • vanilla 
  • 1 cup walnuts chunks

For the topping:

  • 1 T cinnamon
  • 2 T brown sugar
  • 2 T walnuts chunks 

In a bowl add the bananas, oil, milk and eggs and mix.

Add flour, baking powder, baking soda and salt and mix.

Fold gently the walnut chunks.

Pour the butter into the muffin tins and sprinkle with the cinnamon topping combined by cinnamon, brown sugar and walnut chunks.

Bake in a preheated oven at 180C for 25'-30' or until a toothpick inserted comes out clean.

Let cool.
