2 cups zucchini, grated
1/2 large baking potato, peeled and grated 
2 eggs
1/2 yellow onion, finely chopped
1/2 cup extra sharp cheddar cheese, grated
1/4 cup regular plain breadcrumbs
1/2 cup panko bedcrumbs
2 tsp salt

Preheat oven to 400 degrees. Liberally spray 2 mini muffin tins with cooking sray.
Grate zucchini and put it into a colander. Sprinkle it with salt and toss. Put a plate over the zucchini and let it sit for 15 minutes to release the zucchinis liquid. After 15 minutes, put zucchini in a bar towel (or old kitchen towel). Add the grated potato. Squeeze out VERY VERY WELL. 

Put the zucchini and potato in a large bowl. Add other ingredients and mix.
Using a small scoop fill muffin cups with zucchini mixture. Bake for 20 minutes until crisp. Turn on broiler to give the zucchin tater tots a crispy brown top.
