TZATZIKI~ From StoneGable's Kitchen

8 oz. cucumber, peeled
2 tsp kosher salt
3 garlic cloves, pressed
1 1/2 cup plain greek yogurt
1/4 cup extra virgin olive oil

Grate the cucumbers coarsly. Put into a non-metal bowl and add salt. Mix. Let stand for 10 minutes. Squeeze out cucumber liquid in a colander. Do not rinse.
Put cucumbers back in a bowl. Add garlic and greek yogurt. Mix.  Drizzle top with olive oil. 

Eat with pita bread or pita chips.
