TILAPIA WITH BALSAMIC VEGETABLES~ From StoneGable's Kitchen

2 red pepper, cut into slices

2 large onion, peeled, cut into half moon slices

2 TBS olive oil

2 TBS balsamic vinegar

4 tilapia fillets

salt and pepper

4 oz. Borsin Cheese


Preheat oven to 350 degrees.

Preheat cast iron griddle till very hot. Toss peppers and onion with olive oil and a little salt and pepper.


Cook vegetables until soft and slightly brown. Remove from griddle to a bowl. Toss with remaining olive oil and balsamic vinegar.


Put tilapia on a large rimmed baking sheet that has been sprayed with cooking spray. Smother with balsamic vegetables. Crumble cheese over the top of the veggies. Bake for 15 minutes, until fish is done.
