Makes 2
2 Flatbreads
1 boneless, skinless chicken breast, cooked (I like to grill mine)
2 TBS homemade pesto
2 slices applewood bacon, cooked and crumbled
4 slices tomato, thinly sliced
1 TBS Parmesan Cheese, grated
1/4 cup baby spinach, washed and dried

Preheat broiler to high.
Lay flatbread on a large rimmed baking sheet. Spread with pesto. Lay chicken, tomato over the flatbread. Top with applewood bacon crumbles. Sprinkle Parmesan cheese on the top. Broil until melty and slightly golden brown. Remove from the broiler and add baby spinach. Fold in half and then cut in half.
