STONEGABLE TUNA MELTS

chunk white tuna, drained
2 or 3 hard boiled eggs, peeled and chopped
2 TBS onion, very finely chopped
3 TBS celery, very finely chopped
1 heaping TBS sweet pickle relish
2-3 TBS mayonnaise.. or more
salt and pepper
sliced tomatoes
English muffins
cheddar cheese slices

Heat broiler.
Mix tuna, eggs, onions, celery, mayonnaise, salt and pepper in a large bowl and mix well.

Separate English muffins and put then on a large baking sheet. Arrange English muffins halves on the baking sheet. Add a large slice of tomato on top of the English muffin and top that with a big dollop of tuna salad.  Broil on low... not too close to the heat until the tuna salad is warm. Remove from oven and top each English muffin with a slice of cheddar cheese. Return to the oven until the cheese is hot, brown and bubbly. Serve with baby gherkin pickles
