STONEGABLE RUM ROASTED PORK TENDERLOINS

1 pork tenderloin
2 large cloves of garlic, cut into slivers
1 cup chicken broth
2 TBS dark rum

Preheat oven to 400 degrees

Make 8 vertical slits in the pork tenderloin and insert a sliver to garlic. Put the pork in a shallow oven proof dish and pour chicken broth and rum over it. Cover with foil and bake for 30 minutes. Uncover and bake for 10 minutes. Wrap tenderloin in foil and set aside. Put the liquid from the baking dish in a saucepan and reduce by 1/3. Slice pork and serve with rum sauce.
