4 split chicken breasts

chicken stock

2 celery stalks, finely chopped

2-3 scallions, finely chopped... white and green parts

2-3 hard boiled eggs, finely chopped

1/4 cup cashews, rough chopped

2 tsp fresh parsley, finely chopped

1/2~ 2/3 cup  real Mayonnaise (depending on how creamy you like it)

1/2 tsp Dijon mustard

1 TBS lemon juice, fresh

salt and pepper

Poach chicken in a large skillet covered with chicken stock until just cooked through. Remove chicken from pan and cool completely.  You can either chop chicken finely or shred in the food processor. Since I am not putting the chicken salad in a sandwich today, I am chopping the chicken.

Put chicken in a large bowl. Add celery, scallions, eggs, cashews and parsley. 

Mix mayonnaise, mustard and lemon juice in a small bowl. Spoon just enough of the mixture over the chicken to make it moist and creamy. Salt and pepper to taste.
