SPRING SALAD IN A STRAWBERRY VINAIGRETTE~ From StoneGable's Kitchen

2 heads baby Bibb lettuce, rinsed, dried and torn

1/2 cup sliced strawberries

1/3 cup candied pecans

2 scallions, finely chopped

2 TBS crumbled Bleu cheese

4 TBS light olive oil

2 TBS champagne vinegar

1/4 cup strawberry all fruit spread


Whisk oil, champagne vinegar and strawberry spread in the bottom of a salad bowl. Add all ingredients and toss. Serve immediately.
