SB~ BLACK BEAN SALSA SOUP WITH CHICKEN... PHASE 1

    • 2 (15 ounce) cans black beans, drained and rinsed
    • 2 cups vegetable broth (chicken broth works fine - if you are not vegetarian)
    • 2 cups chunky salsa (choose one without added sugar; or make roasted tomatillo salsa and use that)
    • 1 teaspoon ground cumin
    • 2 cooked boneless skinless chicken breasts, shredded
    • Fat free sour cream (optional -- for garnish)
    • Thinly sliced green onion (optional -- for garnish)
 

INSTRUCTIONS

    1. In an electric food processor or blender, combine beans, broth, salsa, and cumin. Blend until fairly smooth.
    2. Add chicken.
    3. Heat the bean mixture in a saucepan over medium heat until thoroughly heated. 
    4. Ladle soup into 6 individual bowls, and top each bowl with a bit of the sour cream and a bit of green onion.
