SALMON WITH PARMESAN-HERB CRUST~From StoneGable's Kitchen

4 salmon fillets

pinch of salt

1 TBS lime juice, freshly squeezed

2 tsp olive oil, divided

1/2 cup breadcrumbs

1/2 cup shredded Parmesan cheese

2 TBS melted butter

1~1/2 tsp tomato-basil seasoning blend

fresh parsley, chopped for garnish


Preheat oven to 375 degrees.

Pat salmon dry with a paper towel and salt salmon.


Place salmon on a foil lined rimmed sheet pan that has been lightly oiled.  Pour oil and lime juice over the salmon.


Mix bread crumbs, Parmesan cheese, melted butter and tomato-basil seasoning in a bowl. Encrust salmon with the mixture.
