ROASTED PEAR SALAD

1 bag baby green, arugula or frisee
1 TBS plus 1/2 cup good olive oil
2 medium pears,halved, cored and sliced crosswise
1 shallots, finely chopped
1 tsp djon mustard
1/2 tsp sugar
pinch of salt and pepper
2 oz. bleu cheese

Preheat oven to 450 degrees. Line a rimmed baking sheet with foil.  Toss pears in a bowl with 1 TBS olive oil.
Roast pears for 10-15 minutes, turning once.

In a small bowl whisk 1/2 cup oil, shallot, dijon mustard, sugar, salt and pepper.

Plate the lettuce on 4 plates. Arrange the roasted pears evenly on the plates. Sprinkle with bleu cheese and drizzle with dressing.
