ROASTED ASPARAGUS

1 lb fresh asparagus
1-2 TBS good olive oil
sprinkle of kosher salt
a few grinds of fresh cracked pepper
1/3 cup good extra sharp cheddar cheese, grated
 Preheat oven to 400 degrees.

Wash asparagus and snap off woody ends. Put asparagus in a single layer on a large rimmed baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 20 minutes until asparagus is just slightly caramelized.
Plate and sprinkle with grated cheese.
