PESTO POLENTA LASAGNA

1~ 18 oz. package of polenta cut in 1/4 inch rounds
1/4 cup pesto (see http://stonegable.blogspot.com/2009/09/pesto-as-summers-heat-gives-way-to.html for homemade pesto... and one of my first blog posts)
1/2 jar marinara sauce
1/2 cup mozzarella, shredded
1/2 cup vegetable farmer's cheese, shredded
handfull of fresh basil, chopped

Preheat oven to 375 degrees.
Grease a small baking dish with 2 inch sides.
Arrange a single layer of polenta on the bottom of the baking dish.
Spread the pesto over the polenta
Pour 1/2 of the marinara over the pesto.
Add another layer of polenta and finish with the rest of the sauce.

Bake, uncovered for 25-30 minutes. Until hot.
Turn on the broiler and top the polenta with the cheeses.  Broil until brown and bubbly.

Serve sprinkled with fresh basil.
