PENNE WITH TURKEY RAGU'~ From StoneGable's Kitchen

1 TBS olive oil

2 leeks, white and green parts finely chopped

2 garlic cloves, presed

8 oz. ground turkey

1 28 oz. crushed tomatoes


1/4 cup fresh basil, chopped

1/4 cup Parmesan cheese, grated

12 oz. penne pasta, cooked and drained and 2~ 1/2 cups pasta water reserved

2 TBS half-and-half

Heat oil in a large skillet over medium high heat. Add leeks and turkey. cook until turkey is cooked and no longer pink. Add garlic and cook for 1 minute. Add tomatoes, 2 cups pasta water and a pinch of pepper and bring the sauce to a boil. Add Parmesan and simmer sauce for 15 minutes. Add half-and-half and pasta. If needed add more pasta water to loosen up the sauce. Heat through. Serve topped with more cheese and basil.
