2-3 boxes of frozen cauliflower or 1 large head of fresh cauliflower
2 TBS butter
1/4~1/2 cup whole milk or cream (cream makes it heavenly)
salt and pepper.
Bring a pot 1/2 full of water to a boil. Add cauliflower and cook until very very well done ( just this side of mushy)
Drain off water and put the cauliflower in a large bowl.
Now treat the cauliflower just like you are making mashed potatoes. Whip with an electric mixer. Whip in butter and just enough milk or cream to give it the consistency of mashed potatoes. Salt and pepper to taste and whip.
