LASAGNA SOUP

2 TBS Olive Oil
2 lbs sweet Italian sausage, removed from casings
1 lb hamburger
2 large onions, peeled and chopped
4 cloves garlic, pressed 
2 tsp oregano
4 tsp tomato paste
2 bay leaves
4 cups beef stock
3 jars marinara sauce with basil ( I use Bertoli)
1 regular can of italian style stewed tomatoes
2 huge handfuls of Parmesan Cheese ( I use Kraft)
1 1-2 inch Parmesan Rind, optional
1 box pasta, (I used fusilli)
2 containers of baby fresh Mozzarella balls, quartered
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
ricotta cheese for garnish!

This recipe make a lot of soup! Great for a crowd or you can freeze the leftovers for another meal.

Heat a large pot of water till it boils. Add the box of pasta according to the directions on the box. Drain when done and set aside.

Heat oil in the bottom of a large dutch oven or stock pot. Add italian sausage and hamburger. Brown. Remove the reserve.
Add onions to the skillet and cook until translucent, about 5 minutes.  Add garlic and cook for 1 minute.
Add oregano and tomato paste and cook while stirring for 30 sec.

Add the Italian sausage and hamburger back into the pot. Stir. Add the stock, bay leaves, marinara, stewed tomatoes and parmesan cheese and rind. Stir to incorporate. Cover and cook for 40 minutes, stirring occasionally.

Add pasta to the soup along with the basil and parsley.  Simmer for 5 minutes. Add Mozzarella just before serving.

To serve ladle into bowls, Top with a dollop of ricotta cheese.
