1 box chocolate wafers
2 cups heavy cream
3 TBS sugar
Whip It (packaged whipped cream stabilizer)
1 chocolate bar
Pour cream and Whip It into the chilled bowl of a stand mixer and using the whisk attachment begin whipping on low at first and increase the speed to high. When the cream has formed soft peaks sprinkle with sugar. Beat until stiff peaks form.
Generously "ice" a chocolate wafer with whipped cream. Top with another wafer. Ice that wafer and top with another. Repeat again. Put the wafer tower on one end of a large platter... put them on their edge to form a little log. Continue to ice the wafers making towers and add them to the log until the log reaches 12-14 inches. Use the whipped cream to ice the entire log. Cover with foil and chill at least 4 hours~ do not let the foil touch the whipped cream. When ready to serve, shave the chocolate bar over the top of the whipped cream. Cut on a diagonal. Serve in a pool of chocolate sauce.
