HERB CRUSTED PORK LOIN~ From StoneGable's Kitchen

zest of 1 lemon

1/4 cup fresh lemon juice

1/4 cup olive oil, plus 2 TBS

6 cloves garlic, pressed or chopped very fine

2 shallots, finely chopped

2 TBS fresh rosemary, chopped

1 TBS fresh thyme, chopped

2 TBS fresh parsley, chopped and divided

2 TBS spicy mustard

salt and pepper

2 pork tenderloins


Put lemon zest, lemon juice, 1/4 cup olive oil, garlic cloves, shallots, rosemary, thyme,1 TBS parsley and mustard in a large bowl. Mix. Add pork loins and cover the pork with the marinade. Put plastic wrap over the bowl and refrigerate overnight.


Preheat oven to 400 degrees.

Heat olive oil in a large skillet. Remove pork loins from the marinade and brown on all sides in the skillet. Put the skillet in the oven and cook until the meat reaches 140 degrees at the thickest part. Remove from oven and put the pork a plate or cutting board. Cover with foil  and let rest 10 minutes.
