HAM AND CAULIFLOWER CASSEROLE~ From StoneGable's Kitchen

Everyone loves a yummy comfort food casserole... even if you eat just a small amount. I love to make casseroles into single servings... so fun!

1 medium onion, chopped

3 TBS butter

2 TBS flour

salt and pepper

dash of nutmeg

1 cup milk

2/3 cup good cheddar cheese

1 small head of cauliflower, cut into florets, cooked and drained

2 cups cooked ham, cubed

1  2-oz jar of pimentos, drained

10 Ritz crackers, crushed


Preheat oven to 350 degrees.

Melt 2 TBS butter in a large skillet over medium heat. Add onions and cook until translucent, about 3-4 minutes. Add flour and gently stir for 3 minutes until it turns a very light blond. Whisk in milk and continue to stir until thickened. Add salt and pepper and a dash of nutmeg.  When sauce is thickened, add cheese and stir until cheese is melted.


Add cauliflower, ham and pimentos. Stir to combine and spoon into a 2 quart buttered casserole.


Wipe out skillet. Melt the remaining butter in the skillet and add crushed Ritz crackers. Toss to combine.

Add the crackers to the top of the casserole.


Bake covered for 30 minutes, until bubbly and hot. Uncover and bake an additional 5-10 minutes until crackers are lightly browned.
