Garden Salad With Lemon Vinaigrette

1 head garden lettuce

3 TBS toasted pine nuts

shaved Parmesan cheese

1 part fresh squeezed lemon juice

2 parts good olive oil

1/2 tsp mustard

good pinch of sea salt

 

Rinse head lettuce and tear into bite size pieces. Blot lettuce with paper towels.

 

Squeeze lemon in a jar with a tight fitting lid. Add twice as much olive oil. Add mustard and salt. Put a lid on the jar and shake vigorously.

 

Put lettuce in a bowl and drizzle with vinaigrette.

 

Plate lettuce. Sprinkle with toasted pine nuts and shaved Parmesan.
