FRESH SALSA

8-10 large heavy plum tomatoes, seeds and liquid squeezed out, diced very small
1/4 cup red onion, very finely chopped
3 garlic cloves, pressed
2 sprigs of cilantro (I'll omit this~ I am allergic to cilantro)
juice of 2 limes
1/4 cup olive oil
salt

Add all ingredients to a large bowl and gently mix. For best flavor let the salsa stand at least 15 minutes.
