FRAN'S BEST RIGATONI~ FromStoneGable's Kitchen

6 sliced meatballs

1/2 lb Italian sausage, casings removed

2 jars Marinara sauce (or StoneGable Homemade marinara sauce)

2 cloves garlic, pressed

1 box rigatoni, cooked according to box directions

1 3/4 cup ricotta cheese

2 cups shredded Mozzarella cheese, divided

1/2 tsp dried basil

1/2 tsp dried oregano

2 eggs

3/4 cup Parmesan cheese, divided


Preheat oven to 450 degrees. Coat a 9x13 pan with cooking spray.


Brown sausage in a large dutch oven. Add meatballs, garlic, and sauce. Stir and bring to a simmer. 


Stir pasta into the meat sauce and tum on low to keep warm. Put half of the sauce into the bottom of the pan.


In a medium mixing bowl add ricotta, 1 1/2 cup of mozzarella, 1/2 cup of Parmesan cheese, eggs, basil and oregano. Mix. Spread it over the layer of pasta and cover the with remaining pasta.


Cover with foil and bake for 25 minutes. Remove foil and sprinkle top with remaining cheese. Bake for an additional 5 minutes until cheese is melted. Serve with meatballs and extra sauce.
