FLAT IRON STEAK ROLL UPS~ From StoneGable's Kitchen

2 flat iron steaks
1/2 lb bacon
4 slices of swiss cheese
1/2 package of baby spinach

Preheat oven to 350 degrees.

With a mallet pound each steak between two pieces of waxed paper until thin. Cut the steak in half lengthwise.
Chop the bacon into small pieces.

Lay the steaks on a work surface. Cut the cheese lengthwise and put 2 slices of cheese on top of the steak.  Divide the bacon between the steaks and top the cheese with the bacon in an even layer.

Divide the spinach between the four steaks and layer evenly. Roll up the steaks from short end to short end. Secure with a toothpick. 
Bake for 30 minutes until done.
