CHOPPED SALAD WITH BACON AND BLEU CHEESE

3 TBS champagne vinegar
1 tsp Dijon mustard
dash of salt and pepper
6 TBS good olive oil

1 bag romaine lettuce, chopped
3 roma tomatoes, chopped
2 cucumbers, chopped
8 canned artichoke hearts, chopped
8 strips of bacon, cooked and crumbles
1 large Hass avocado, chopped
4 scallions, chopped (white and green)
4 oz. bleu cheese, crumbled

In a ball jar add vinegar, mustard, oil and salt and pepper. Shake well.

Combine the rest of the ingredients into a large salad bow. Mix well, but gently. Add dressing and stir to coat.
