Caramelized Onion, Bacon and Potato Tart~ From StoneGable's Kitchen

2 baking potatoes
4 oz. good quality bacon, chopped
1 large sweet onion
1 garlic clove, pressed
1/2 cup light cream
3 large eggs
Pinch of nutmeg
Salt and pepper
1/2 pie dough recipe~ I use Martha Stewart's Pate' Brisee

Make pie dough according to recipe. Use 1 half of the dough and blind bake in a tart pan with a removable bottom. Set aside.

Preheat oven to 350 degrees.
Scrub and prick potatoes. Bake until fork tender, about 1 hour. When cool enough to handle peel the potatoes and slice them into rounds.

Heat skillet to medium high heat. Cook bacon until crisp and remove to a paper towel to drain.

Add onions to bacon fat and cook over medium heat stirring often until onions start to color. Lower heat and continue to cook until onions are tender and beginning to brown, about 10 minutes. Add garlic and cook for 1 minute.

Whisk cream and eggs into a bowl and add nutmeg and a dash of salt and pepper. 

Spread 1/2 of the onions on the bottom of the tart. Layer potatoes in a an overlapping circle covering the whole tart. Add the remaining onions to the top of the potatoes and sprinkle with the bacon.

Pour cream mixture into the tart shell. Do this slowly to let the cream fill the whole tart. Put the tart on a baking sheet and bake about 40 minutes, until filling is set. Remove from oven and let rest 5 minutes before cutting it.
