BIBB LETTUCE IN PARMESAN CUPS~ From StoneGable's Kitchen

1/4 cup grated Parmesan Cheese (use only high quality cheese)

1 head Bibb lettuce, chopped

2 TBS freshly squeezed lemon

5 TBS light olive oil

pinch of salt

2 tsp. toasted pine nuts



Preheat oven to 350 degrees. Put a silpat on a large rimmed baking sheet. Spoon circles of Parmesan onto the silpat. Bake for 10 minutes. Meanwhile, turn 4 ramekin upside down on a    counter. When the parmesan  is melted and brown around the edges GENTLY and quickly (THEY ARE VERY FRAGILE) pull them off of the silpat with a large spatula.  Drape the Parmesan over the ramekin, forming a cup. When it is cooled, remove the Parmesan and turn over the cup.


In a bowl mix lemon juice, olive oil and salt. Whisk well. Add the torn lettuce and toss.  Fill the Parmesan cups with lettuce. Sprinkle each cup with pine nuts.
