1 TBS olive oil
1 TBS butter
3 green onions, chopped
1 garlic clove, pressed
1 9 oz. package of frozen artichokes, thawed, drained and rough chopped
4 large eggs
2 TBS flour
8 oz. Monterey Jack Cheese
2 TBS Parmesan Cheese, grated
2 TBS fresh parsley, chopped
2 dashes hot sauce
salt and pepper

Preheat oven to 325 degrees.

Heat oil and butter in a large saute pan. Add onions and cook until translucent and soft, about 4 minutes
Add garlic and cook for 1 minute. Cool for about 5 minutes. Add artichokes.

Whisk eggs together in a large bowl. Whisk in flour. Add Monterey Jack Cheese, Parmesan cheese, parsley, hot sauce and salt and pepper. Mix well.

Pour mixture into an 8x8 baker that has been sprayed with cooking spray. Bake for 30 minutes until the artichoke bake is set and browned on top. Let rest for 10 minutes before cutting into squares.
