ARUGULA SALAD WITH BLEU

2 shallots, minced

6 TBS good champagne vinegar

1 TBS honey

1TBS Dijon mustard

3/4 cup good olive oil

salt and pepper

2 granny smith apples, cored and thinly sliced

1/4 cup cashews, chopped

4 cups arugula

1/3 cup good bleu cheese


Put the shallots, vinegar, honey, mustard, olive oil, salt and pepper into a jar with a tightly fitting lid. Shake to emulsify. 


Put arugula, apples, cashews and bleu cheese in a large salad bowl. Drizzle with dressing to lightly coat. Toss and serve immediately.
