ARTICHOKE SALAD~ From StoneGable's Kitchen

2 jars marinaded artichokes

2 shallots, finely minced

1 handful of parsley, chopped

1/4 cup white balsamic vinegar

3/4 cups good olive oil

salt and pepper

sliced tomatoes


Drain artichokes. 

Meanwhile whisk balsamic and olive oil in a bowl. Add shallots, parsley and artichokes. Salt and pepper. Toss to coat. Cover and refrigerate overnight.  Serve with sliced tomatoes.
