Smoky Chipotle Sliders with Smoky Chipotle Mayo

from Sticky, Gooey, Creamy, Chewy


1 lb ground chuck
1 lb ground sirloin
1 medium-sized sweet onion, grated
1/4 cup fresh parsley, finely chopped
2-4 chipotle peppers in adobo sauce, pureed with 2 tablespoons of sauce (depending on how spicy you want it)
Salt and pepper to taste
Slider buns (Pepperidge Farm) or small potato rolls
Smoky Chipotle Mayo (recipe follows)
American cheese slices cut into quarters


Mix first 6 ingredients together in a large bowl.  Form into small patties about 2-2 1/2 inches in diameter.  Using an ice cream or meatball scoop for this makes the perfect sized sliders.

Grill or fry until sliders reach your desired level of doneness.

Top with a piece of cheese and Smoky Chipotle Mayo and serve on toasted slider buns.

Makes about 24 sliders.

Smoky Chipotle Mayo

1 cup Mayonaisse
2 chipotle peppers in adobo sauce with 1 tablespoon of sauce
1/2 teasoon sugar
1 teasoon smoked paprika
1 tablespoon fresh lime juice

Combine all ingredients in a food processor or blender and whiz until well blended.
