Hazelnuts cookies with maple syrup

Make 14 cookies

    • ·         150 g all-purpose flour
    • ·         60 g grilled hazelnuts*
    • ·         30 g chestnut flour
    • ·         40 g brown granulated sugar
    • ·         110 g soy butter at room temperature
    • ·         1tbsp maple syrup
    • ·         1 pinch salt
    • ·         1 tsp vanilla extract
    • ·         1 tsp orange zest




*To make hazelnut flour from scratch, place whole skin-on hazelnuts (about 1/4 pound) on a rimmed baking sheet. Toast at 350°F until the skins blister, about 14 minutes. Let cool slightly, then transfer nuts to a clean kitchen towel and rub together to remove the skins. Transfer nuts to a food processor and cool completely. Pulse until finely ground.

In a bowl mix together hazelnut flour, all-purpose flour,chestnut flour, sugar and 1 pinch of salt. Mix well. Add orange zest, maple syrup, vanilla extract and butter.

Preheat oven at 180.C

On floured work surface.  roll out the dough until it reaches a thickness of 1.5 cm. Cut the biscuits in the shape you prefer. Place them in a baking pan lined with parchment paper. In the oven for 12 to 15 minutes
