Mom's Recipe :)
Yields: 5 pancakes

1 ¼ cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 egg, beaten
1 cup milk
1 tablespoon vegetable oil

Topping ideas:
blueberries or any other fresh fruit
banana slices
chocolate chips (my husband's favorite!)

Begin by sifting the flour, sugar, and baking powder into a large bowl. Beat one egg and combine the egg, milk, and vegetable oil in a separate bowl. Whisk until mixed together. Add the wet mixture to the dry sifted ingredients, mixing until ingredients are blended, but still slightly lumpy. If you over mix, your pancakes can become tough.

Heat a non stick skillet at medium heat. Add 1 tablespoon of butter and drop 1/4 cup of batter onto the pan. If you're using toppings, place the toppings into the batter once you've poured the 1/4 cup of batter onto your pan. Then spread a little batter over the pancake to cover the toppings so not to burn them. Allow to cook until the bottom is golden, flip the pancake over and cook until the opposite side is golden brown. Transfer to a plate to cool and continue these steps until all of your batter is used. Sift a little confectioners sugar for a pretty presentation and serve with butter and syrup.
