Maple Bacon and Egg Breakfast Sandwich

8 slices of bacon
1/4 cup maple syrup
4 tablespoons butter
4 eggs
salt and pepper
4 bagels
4 slices of cheddar cheese
1/4 cup chopped scallions or chives

Start with cooking your bacon in a large saute pan over medium/high heat until crispy:  Transfer your bacon to a plate lined with paper towels.  Spread about 1/4 cup of syrup on a small plate.  Then break your bacon pieces in half and submerge in the syrup.  Soak your bacon in the syrup while you prepare the rest of your ingredients.

Melt 1 tablespoon of butter on a small saute pan over medium heat and crack your egg.  Once your egg white whitens, using a spatula, flip your egg.  Be careful not to break the yolk.  Cook for another minute to allow the other side to cook slightly without hardening the egg yolk.

Meanwhile, cut your bagel in half and toast it in a toaster until golden.  Place your bagel on a piece of foil or cookie sheet and top with a slice of cheddar cheese.  Top with your egg and season with salt and pepper.  Then add your bacon and finish with chopped scallions or chives.  Top with the second half of your bagel and bake at 350 degrees for 3 minutes or until the cheese is melted.  Be careful not to bake for too long or your egg yolk will harden.  Slice your bagel in half and add a drizzle of additional syrup on your plate for additional dipping.
