Sixty Dollar Chocolate Chunk Cookies
3/4 cup firmly packed brown sugar
3/4 cup sugar
1 cup butter, softened
1 egg
1 1/2 teaspoons vanilla
2 1/4 cup all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
4 1.65-oz. milk chocolate bars
4 1.65-oz. dark chocolate with almond bars

Combine brown sugar, sugar, butter, egg and vanilla in a stand mixer fitted with a paddle attachment or large mixing bowl and mix on medium speed until well blended.

Combine flour, baking soda and salt in a separate bowl and stir to combine.  Add flour mixture to sugar mixture and continue mixing until all ingredients are incorporated.

Chop half of the chocolate bars into fine pieces and shavings.  Chop the other half into large chunks.

Add all chocolate to cookie batter and stir to combine.

Using a tablespoon, drop rounded spoonfuls of dough onto an ungreased cookie sheet and bake at 350 degrees for 9-11 minutes or until bottom edges start to brown.

*Substitute equal amounts of whatever chocolate bars or morsels you can find if needed.  Oddly enough, not everyone has sixty dollars worth of assorted chocolate bars on hand!
